LEMON BARS

YIELDS: 45 Bars


BAKING TIME: 50 Mins

OVEN TEMP: 350°F

for the bars:

  • 1 cup butter

  • 2 cups sifted flour

  • 1/2 cup sifted confectionary sugar

  1. Preheat oven to 350 degrees F.

  2. Cream butter. Then add the flour and confectionary sugar to the butter. Mix.

  3. Press mixture on the bottom of an un-greased pan (13x9x2).

  4. Bake in oven for 20 minutes.

  5. While the bottom mixture is baking, prepare the topping.

For the topping:

  • 4 eggs

  • 2 cups of sugar

  • 1/2 teaspoon salt

  • 2 teaspoons grated lemon rind

  • 1/3 cup lemon juice

  • 1 teaspoon baking powder

  • 1/4 cup sifted flour

  1. In a bowl combine well beaten eggs, sugar, salt, grated lemon ride, and lemon juice.

  2. In a separate bowl combine baking powder and flour.

  3. Add baking powder and flour mixture to the egg mixture (first step) and mix together.

  4. Once the bar is done baking, spread topping mixture onto hot baked layer.

  5. Bake for 30 minutes.

  6. Cool. Cut into bars.

  7. Sprinkle with additional confectionary sugar.
